Ingredients (Makes 10–12 cookies)
- 200g Datekin Sukkari Dates, pitted
- 60ml warm water
- 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- 1 egg (or flax egg for vegan version – 1 tbsp flaxseed + 2.5 tbsp water)
- 120g rolled oats
- 50g ground almonds
- ½ tsp baking powder
- ½ tsp cinnamon
- Pinch of sea salt
- Optional: dark chocolate chips, chopped nuts, or seeds
Method
- Preheat & prep: Set your oven to 170°C (fan) or 180°C (conventional). Line a baking tray with parchment paper.
- Soften the dates: In a small bowl, soak your Datekin Sukkari Dates in warm water for 5–10 minutes. Once soft, blend into a smooth paste using a food processor or hand blender.
- Mix the wet ingredients: In a mixing bowl, combine the date paste, coconut oil, vanilla extract, and egg. Stir until fully combined.
- Add the dry ingredients: Fold in the oats, ground almonds, baking powder, cinnamon, and salt. Mix well. The dough should be sticky but manageable. If it's too loose, add an extra spoon of oats.
- Shape the cookies: Scoop out a tablespoon of dough and form into small cookie shapes on the baking tray. Press down slightly – they won't spread much.
- Bake & cool: Bake for 12–15 minutes until the edges are golden and the centre feels firm. Let them cool on the tray for 10 minutes before transferring to a wire rack.
