Golden-brown date and oat cookies with Sukkari dates on beige background

Looking for a guilt-free cookie that actually tastes good? We’ve got just the thing.

These naturally sweet cookies are powered by our Datekin Sukkari Dates – soft, caramel-like, and packed with natural energy. No refined sugar. No faff. Just pure, nourishing ingredients that do your body (and your tastebuds) a favour.

Whether you're meal-prepping snacks, fuelling a workout, or craving something sweet without the crash, these are the kind of cookies you'll come back to again and again.

What Makes These Cookies So Good?

    • Sukkari Dates: Nature’s caramel – sweet, sticky, and loaded with fibre and antioxidants.
    • Oats: A slow-release energy hero that keeps you fuller for longer.
    • Almonds: Protein-packed crunch that adds texture and keeps things satisfying.
    • Coconut oil: A wholesome alternative to butter or margarine.
    • Cinnamon & vanilla: For that warm, spiced cookie flavour with zero guilt.

    Ingredients (Makes 10–12 cookies)

    • 200g Datekin Sukkari Dates, pitted
    • 60ml warm water
    • 2 tbsp coconut oil, melted
    • 1 tsp vanilla extract
    • 1 egg (or flax egg for vegan version – 1 tbsp flaxseed + 2.5 tbsp water)
    • 120g rolled oats
    • 50g ground almonds
    • ½ tsp baking powder
    • ½ tsp cinnamon
    • Pinch of sea salt
    • Optional: dark chocolate chips, chopped nuts, or seeds

    Method

    1. Preheat & prep: Set your oven to 170°C (fan) or 180°C (conventional). Line a baking tray with parchment paper.
    2. Soften the dates: In a small bowl, soak your Datekin Sukkari Dates in warm water for 5–10 minutes. Once soft, blend into a smooth paste using a food processor or hand blender.
    3. Mix the wet ingredients: In a mixing bowl, combine the date paste, coconut oil, vanilla extract, and egg. Stir until fully combined.
    4. Add the dry ingredients: Fold in the oats, ground almonds, baking powder, cinnamon, and salt. Mix well. The dough should be sticky but manageable. If it's too loose, add an extra spoon of oats.
    5. Shape the cookies: Scoop out a tablespoon of dough and form into small cookie shapes on the baking tray. Press down slightly – they won't spread much.
    6. Bake & cool: Bake for 12–15 minutes until the edges are golden and the centre feels firm. Let them cool on the tray for 10 minutes before transferring to a wire rack.

    How to Store

Keep these beauties in an airtight container for up to 5 days. Or freeze them for later – if you can resist.

    Pro Tip

Want to jazz it up? Add:

    • A sprinkle of sesame seeds on top
    • A handful of chopped pistachios or walnuts
    • A few dark choc chunks (trust us – that Sukkari + chocolate combo = 🔥)

    Try These with a Cuppa

These cookies pair perfectly with a hot coffee, herbal tea, or even a glass of almond milk. It’s that mid-afternoon pick-me-up you didn’t know you needed.
